Preparation Steps
- Cook jasmine rice according to package directions.
- Slice sirloin thinly against the grain. Toss with 1 Tbsp cornstarch and set aside.
- Whisk soy sauce, beef broth, brown sugar, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes together.
- In a separate small bowl, mix 2 Tbsp cornstarch with ¼ cup cold water.
- Heat 1 Tbsp cooking oil in a large skillet or wok over high heat. Sear beef in small batches for 1–2 minutes per side. Transfer to a plate. Add remaining oil as needed.
- Add broccoli and ¼ cup water to the skillet. Cover and steam 3–4 minutes until bright green and tender-crisp. Uncover and allow excess water to evaporate.
- Pour sauce mixture into skillet and bring to a simmer. Stir in cornstarch slurry gradually until sauce thickens.
- Return beef and any accumulated juices to skillet. Toss with broccoli and sauce for 1–2 minutes, until beef is cooked through.
- Serve immediately over jasmine rice.
